A major part of our Autumn is spent putting food away. Our family has been working on this for many years. Figuring out what to grow for storage has been a learning experience. Over time we have developed a system that seems to keep our pantry filled for the year. I used to plant many different vegetables(27 one year), but have narrowed planting to what our family's likes are as well as what grows well in our conditions. We have e few different gardens. The "Kitchen Garden" which is closest to our house always contains lettuces, radishes, herbs, tomatoes, Swiss Chard, Kale, Zucchini and Beans. Items that are typically staples for the salad summer months. The "Root Vegetable Garden" is closer to the farm due to space and includes Potatoes, Turnips, Carrots, Garlic, Squash, Pumpkins, Beets and Peas. The last garden I will call 'Oma's Garden" is placed at my mothers house. Oma's Garden includes whatever an abundance of seedlings we have. These can range from Peppers to Cabbages to Squash etc I love planting at this garden as my mom has a magical way with growing. Her gardens flourish with an abundance of greenery and vegetables. At 80 years of age she seems to have perfected the art of coaxing plant life to its best. Throughout our property we also have perennial fruits and vegetables. Apple, Cherry, Pear and Plum trees are now bearing fruit. Asparagus Sorrel, Horseradish and various herbs grow as well. Blueberries, Raspberries Gooseberries, Blackberries and Currents are also interspersed on our land. We even have an Almond tree that my mother coaxed from a plant that appeared in her garden . Whether or not it bears food will be determined.It is from these gardens that we are able to stock shelves with jars of sun ripened tomatoes, pasta sauces, salsas, chili sauces, green tomato mince meats beans, pickles, relishes, jams....you get the picture! What we cannot grow we purchase locally. Peaches and Strawberries are a must in the pantry so we purchase Ontario Grown! The freezer has been filled with Kale, Swiss Chard, Rhubarb, Gooseberries, Wild Leeks, Currants, Corn, Beans and Herbs. Squash, Cabbages, Potatoes, Carrots, Beets, Onions and Garlic have been tucked away in the cold storage. We also have the products we raise on the farm. Fresh Eggs and Pastured Pork, Beef , Chicken and Turkey fill our freezers.Occasionally we have milked a cow and provided the house with cheese, yogurt butter, cream and milk. To some this sounds like an overwhelming task. To us it has become a way of life. The satisfaction of having your bases covered when it comes to a full pantry is indeed a good feeling.
What we do is nothing new. Putting food away has been done for centuries.It was a necessity Anyone can do this. It does not have to be done our way. It's just what works for us. We started on a much smaller scale and continue to tweak based on garden abundance. Root crops were not great this year. Tomatoes, Kale and Swiss Chard seemed to dominate. Every year is different! Anyone can do this. It can start with a tomato plant on the deck , purchase product from your neighbor or trade something you have in abundance. Be creative and have fun with it! You can participate at whatever level works for you. Plan ahead.........it wasn't raining when Noah built the Arc!

Katy's Ladys continuing to produce fresh brown and white eggs. You never know what your carton will contain. The outdoor fridge is still in operation and running by the honor system.
